13 volumes of an encyclopedia.
we wrote them together with 6 visionaries who live in 6 different parts of the champagne region.
we wanted to choose 18 hectares of the best territories abundant in grand cru and premier cru and have the best connoisseurs of the land and their grapes for each small piece of land.
the pressing had to be within 90 minutes of the harvest to avoid oxidation and so it was. we told them we are not interested in making champagne so much and in having products that everyone likes but we have to make them that are not so excellent that those who love champagne will like them as they used to be.
in 1970 champagne was drunk by 17% of the bourgeois population today by 44% because it has become a popular product except for a few labels.
thus 13 small masterpieces were born, all different from each other but united by a thin thread called sapidity.
you will always feel a final saline trail but through completely different sensations.
